Ginger & Jujube Tea — A Warming Sohan Seasonal Recipe
Season: Sohan (小寒) — Mid-January to Daehan

Sohan, the coldest phase in the Korean medicine seasonal calendar, calls for warming foods and drinks to help the body conserve energy and maintain balance. This simple Ginger & Jujube Tea is perfect for this season.
Ingredients
1–2 slices of fresh ginger
4–5 dried jujubes (Korean red dates)
2 cups of water
Optional: a small drizzle of honey
Instructions
Rinse the jujubes and slice them in half.
Slice fresh ginger thinly.
Add jujubes and ginger to 2 cups of water in a small pot.
Bring to a boil, then simmer on low heat for 10–15 minutes.
Strain into a cup. Add honey if desired.
Enjoy warm, ideally in the morning or afternoon.
