Pine Nut Juk (잣죽) — A Nourishing Daehan Recipe

Season: Daehan (대한) — Late January to Early February
Purpose: Deep nourishment, kidney support, and gentle energy storage

During Daehan, the body is at its most inward, conserving energy and focusing on foundational strength. Warm, easy-to-digest foods help maintain kidney energy, circulation, and immunity. Pine nut juk is a traditional Korean porridge that perfectly fits this season.

Ingredients

  • ¼ cup pine nuts

  • ½ cup short-grain rice

  • 3 cups water

  • Pinch of salt (optional)

Instructions

  1. Soak the rice for 30 minutes.

  2. Blend pine nuts with 1 cup of water until smooth and milky.

  3. Cook the rice with the remaining 2 cups of water on low heat until soft.

  4. Stir in the pine nut mixture and simmer for 5–10 minutes.

  5. Add a pinch of salt if desired. Serve warm.

Benefits

  • Pine nuts: Nourish the kidneys, support the nervous system, and promote gentle energy restoration

  • Rice: Provides grounding, easily digestible carbohydrates

  • Warm porridge: Gentle on the digestive system and ideal for cold winter days

This simple, warming dish is perfect for Daehan, helping your body store energy and prepare for the upcoming spring season.

Gamcho Tip:

During Daehan, enjoy pine nut juk warm and unseasoned, preferably in the morning or early evening. Avoid eating it straight from the refrigerator, and pair it with a calm routine—dim lighting, no screens, and slow eating—to help the body fully absorb its nourishing benefits.
